About Caviar

Caviar is a ready to eat foodstuff and needs no preparation and cooking before consumption, high level of protein and essential amino in caviar has turned it into a matter of life , increases the body’s resistance against heart attack, the prevention of cancer and gastrointestinal diseases, arthritis, MS ,anaemia diseases and many other properties.

The Caspian Sea is the major habitat of sturgeon species in the world, about 90% of the natural caviar and 70% farmed caviar with the water of Caspian Sea which are annually supplied to the world market comes from the side of Caspian Sea in Iran.

The ecological conditions of southern parts of the Caspian Sea along with proficient management and skill of Iranian caviar processors, after the ban on natural caviar export according CITES, Europe Union’s approach to the use of famed caviar, and cause of greed and tests and nutritional quality of farmed caviar is very closed to natural caviar therefore, the level of demand for this product is still high in Europe Union, so we can say France, England, Germany, Italy, Spain and Russia are the main consumer of this product in the world that Iranian Caviar are a particular favourite.

Food stuffs availability such as aquaculture small ( ROSHK ) and small fishes ( KELIKA ) that exist in the water of Caspian Sea ,

Suitable water's temperature between 14 degrees Centigrade and 22 degrees Centigrade, During the year , specially in summer and winter this temperature has great effect on quality of caviar .

mixing sea water and well water which according to the existing analysis and laboratory certificates on appropriate source for breeding this kind of sturgeon species on the coast of the Caspian Sea .
